For those wondering, asparagus contains asparagusic acid. On its own, asparagusic acid does not smell. As our bodies digest asparagus, the asparagusic acid breaks down into sulfuric byproducts. Within 15 to 30 minutes of eating asparagus the sulfur byproducts are collecting and ready for draining from our bodies. When drained, the sulfur quickly evaporates resulting in a rather unpleasant odor. This chemical reaction process can continue for hours.

Asparagusic acid occurs naturally only in asparagus. Its effects vary person by person, with some not experiencing the odiferous reaction while others may not notice it.

Smelly or not, asparagus is a healthy vegetable. Enjoy it!
